Pork in Black Bean Sauce

This is essentially a quick stir-fry dish and takes only minutes to cook once all the ingredients have been chopped and prepared. Ginger, black beans and chillies complement each other beautifully and add so much flavour to the dish. You could also substitute pork with chicken, beef, lamb or even prawns and squid.

INGREDIENTS

  1. 450g (1 lb) thinly sliced lean pork (either from pork tenderloin or leg of pork)
  2. 1 tablespoon preserved black beans
  3. 1 tablespoon preserved yellow beans
  4. 1 tablespoon chopped ginger
  5. 2 cloves garlic, chopped
  6. ½ teaspoon of ground white pepper
  7. 2 teaspoons sugar
  8. 1 tablespoon dark soy sauce
  9. 1 teaspoon sesame oil
  10. 1 fresh red chilli or 1 teaspoon dried crushed chillies plus 1 extra red chilli for garnish
  11. 2 tablespoon vegetable cooking oil
  12. ½-1 cup water
  13. 1 tbsp chopped spring onions for garnish

METHOD

  1. Heat cooking oil in wok or shallow saucepan to smoking point and then quickly toss in chopped ginger and garlic. Quickly stir in pork slices and keep stirring to prevent sticking.
  2. After a minute or so add the other ingredients in quick succession and mix well.
  3. The pork should take only 8-10 minutes to cook through. Check seasoning and transfer onto serving plate or leave in saucepan to keep warm until ready to serve.
  4. Garnish with spring onions and sliced red chillies.
