Thai Red Curry Mix

Three easy steps to a delicious red fish or chicken curry.

You will need 850g of white fish, for example cod, hake or monk fish and 400ml of coconut cream or 850ggm of chicken breast, cut into 2 cm cubes. This quantity will serve 4-5 persons.

  1. Heat a small stainless steel pan and add a jar of Red Curry mix.
  2. Stir in 400 ml coconut cream and bring to a simmer for 3-5 minutes over medium heat.
  3. Add the fish and ook for 8-10 minutes. The chicken pieces will need to be cooked for about 30 minutes.

Transfer to a serving dish and garnish with a sprig of fresh coriander leaves, lime leaves or sliced red chillies. Increase the amount of Red Curry mix if a thicker and more spicy sauce is desired.
